Savory Chèvre Balsamic Chips

I thought I would share with you another recipe from the NYE Photoshoot we did (featured on The Pazzazzerie). I am also enjoying watching the menu grow with hyperlinks (look to the banner above for the New Year’s Eve Menu).

Are you looking for an easy, great tasting appetizer for New Year’s Eve?

Then these ingredients should be on your grocery list STAT! Although this appetizer is a bit of a balancing act, the flavors from each ingredient combine beautifully for a complex dish.

The wow in this appetizer is in the quality ingredients (and their complexity of flavors) more than the presentation. That said, I would love to see the variety of ways people decide to serve this! I think it could even very easily be adapted into a salad 😉

Savory Chèvre Balsamic Chips

  • 1 bag of veggie chips (I used Terra exotic Vegetable Chips in Mediterranean or you could do 12 homemade dehydrated veggie chips)
  • 1/4 lb soft cheese (Brie pictured), thinly sliced
  • 1 c micro greens (light, green lettuces)
  • 10-12 spicy olives (spicy Tunisian olives from Zupan’s Market pictured), pitted and cut in half
  • 2 T balsamic vinaigrette for drizzling (the sweeter the better)

Pick out your prettiest chips and place them on your platter. Stack on top some micro greens, sliced cheese, olive, and drizzle with balsamic vinegar. You’ll notice that I put my vinegar in a small eye dropper to make the dripping easier. I love it! Serves 4 with 3 piece servings.

    Have you tried the Trader Joe’s balsamic glaze? It makes things so easy. I love Cheve and Balsamic together, this looks so good.
