A long week–they always seem even longer after a stretch of holidays, don’t they? Welp, next one isn’t until May so suck it up!
The recipes for this Food Lover’s Friday definitely are a good cop/bad cop kind of team. You have the cake, which is DELICIOUS but still cake (bad, bad cake!), and then you have the Vietnamese chicken salad which is great either on the jicama or as a big salad with everything chopped up together (good, healthy salad)!

I made this cake a little while back with my nieces, and not only was it quite error proof, it was delicious! We made it in my 12in cast iron skillet that we are so glad we found on Amazon for a STEAL (under $20!!). We followed the recipe using a GF flour mix from Only Sometimes Clever. I need to get another batch of this out the door and into my office because I know it will be a real crowd pleaser.
