Food Lover’s Friday

Did you survive Valentine’s Day? Me too. Ktams was sick so we kept things very low-key. He had bought me flowers on the 13th while we were grocery shopping (gorgeous mixed bouquet from New Seasons), and last night he cooked me dinner after my 5 mile run. Then we just vegged. While I have to go to work like most other normal people, Ktams is off today AND Monday. I seriously work in the wrong industry.

This Food Lover’s Friday I bring you down home southern comfort food and something spicy from the far east. The stewed beef is a nice slow burn that’s cooled by the grits, whereas the Thai stirfry can be all fire if you like it that way.

Spicy Stewed Beef with Cheesy Grits

We had been enjoying some of Pioneer Woman’s recipes, so when I found this recipe for stewed beef and grits–Ktams has quite the weakness for grits–we had to give ‘er a go. This recipe is a nice slow cook, great for the weekends. I would recommend either REALLY liking grits, freezing a lot, or halving the recipe. Ooo! Or have guests over!

Panang Curry with Beef

Before we moved to Portland we used to love Thai food! Now I’m sometimes kind of tired of it. When I’m not tired of it though I really like this recipe! It’s one of my very first pins ever on Pinterest too! It’s very flexible, which means we lean towards using more in season veggies when we make it–you can also add some extra peppers for some heat! This is a winner for a weeknight meal and because Keffir lime leaves are hard to find sometimes, we enjoy ours with some extra basil and a splash of lime juice. This baby gets 3 peppers if you make it right!

I hope Food Lover’s Friday makes cooking outside of your comfort zone a little easier knowing these recipes won’t flop! …unless I tell you otherwise–and don’t worry I’ll try and give lots of warnings to the flops 😛

I love this series! 😉 Those recipes both sound amazing… we looooooove Thai food but now that I’m eating meat again I want to find a place that has quality meat–grassfed beef and pork are what I’m comfortable with at this point. No chicken or anything. If you know of any great Thai places, lemme know! And, we ought to perfect our home Thai cooking…

Is this the stewed beef recipe you used? Sounds awesome! Just clipped it to my Recipes Evernote notebook and will try with our last package of stew beef from our 1/8 cow we bought! =)

That beef and grits recipe looks delish! I may have to dig out my copy of that cookbook and give it a try!
