I just wanted to share a little Weekend in Review via Instagram with you! Friday, we had a double date with our friends Megan and Adam at their place in the Pearl and went halvies on dinner. I made an enormous greek salad, and she made not one but TWO delicious, heavily topped pizzas. That and some red wine and I was in heaven! Megan also did something I have never done with homemade crusts before–she lined the bottom of the pan with blue corn grits and it really caused the crust to cook nice and even–an issue I think all home pizza chefs have with their crusts at times. I hope to get back together immediately and work on a pizza crust collaboration of sorts. 😉

As you know V-Day was Thursday, and I had a surprise on my desk from a co-worker–vodka gummies and a “Don’t Hate Me ‘Cause I’m Texty” pin! Homemade valentines are even better when made edible! My co-worker, Lisa, had soaked the gummies in vodka for two weeks leading up to the big day, then refrigerated them. I might have to give this a try–I could see it being really good in a lemon flavored vodka, then perhaps at the bottoms or around the sides of martini glasses at a party!
This weekend I ALSO ran the furthest ever!!
8 miles!!

I’ve heard of the corn meal before on the pan – but I’ve never tried it. Hooray for 8 miles! Can’t wait til the shamrock!
Mm that sounds like a nice trick with the crust- and that pizza looks gorg like I would expect in a restaurant! Also love the idea of little gummy bears swimming in a martini…
Congratulations on your progress running, especially if the last few were uphill- I’m huffing and puffing on my daily hill towards home and I’m just walking!
8 miles!!!! ROCK STAR!!!!!! So proud of you girl! You’re well on your way to an awesome race next month!
Cauliflower crust is my go to for crusts. Not quite the same but still mightly delicious. Good Job on the 8 Miles!
Oh man, 8 miles is a lot. I honestly can’t remember ever running more than a 5k, so I’m pretty sure I haven’t 😉
And…that pizza looks soooo good!
Blue corn grits…never heard of doing that before. I’m going to try it!
